The Island already had a couple of those little bar-top ovens. That wouldn't quite do what we wanted but it would work for warming up some loaves if we par-baked them. I started making a list of the equipment that we needed to buy or rent. For now, the cash register would suffice. We just needed ovens and a warmer. There was already gas to the building, so we wouldn't need to wait on any utilities to be hooked up.
