Andalusia was already one of the core regions for black-hoofed pigs, particularly in its mountains and oak forests. These pigs are fed primarily on acorns (Bellota), which are rich in oleic acid, giving the ham its mild aroma and intense flavor. High-quality Ibérico ham has a rich taste with nutty, buttery, and sweet notes while retaining the natural saltiness of the ham, with a soft, non-dry texture.
